Daniel Bellino-Zwicke? How is he? He’s a Best Selling Cookbook Author and one of New Yorks Top Big Dogs of Italian Wine, a former Chef of such restuarants as; Woods, Corrado, and Bar Cichetti … Daniel was in the Hotel/Restaurant Mangement at New York Techenical .. Besides being the chef at the previous named restuarants, Daniel worked with Michel Fitoussi at the famed Palace Restaurant in the late 80’s as well as at the Odeon under the great Patrick Clarke.
Daniel got out of the kitchen in the late 90’s to become The Maitre’d at the uber hot # 1 Celebrity Hot Spot Da Silvano where he took care of people like; Keith Richards, David Bowie, Paul McCartney, Uma Thurman, Richard Gere, Joe Pesci, Robert DeNiro, Calvin Klein, Nick Pileggi, Nora Effron, Graydon Carter, Gwyneth Palthrow, Madonna, Lucy Lui, and-on-and-on, the list is way to long to name them all.
Daniel took care o f the high-flying cliental of the Top People in The Fashion World, Record Business, Publishing, Movie Stars and Rock Stars and is known for his easy going abilty of taking care of all the big stars needs in a casual attentive manor without being intrusive in any way, reasons for him being well known to The Movers & Shakers of  these high profile business feilds. 
Daniel had made quite a name for himself as the creator and Executive Chef / Wine Director and Managing Partner of Bar Cichetti, the 1st ever Venetian Wine Bar (Bacaro) in America, which was Daniel’s proud creation. As Chef / Wine Director of Bar Cichetti, Daniel firmly establsihed himself as one of New York and America’s Top Italian Wine Guys .. He is personal friends with most of Italy’s top wine producers, the likes of; Marchese Ferdinando Frescobaldi, Sebastiano Rosa winemaker of Sassicaia, Marchese Piero Antinori of Antinori Wines, Givanni Folnari of Nozzole, Gianlucca Grasso, Gianpaulo Venica, Cavalier Luigi Cappellini of Castel Verrazzano, and-on-an-on, just like all the Movie Stars & Rock Stars that Daniel knows, the list of Italian Wine Luminaries is even greater.
As we’ve already stated, Daniel left restaurant kitchens behind to become a noted Italian Wine Guy and Maitre’d who really knows how to take care of those  high-end clientel. But not only them of course, there’s everyone else, shall we call them the regular folk? Hey, they make up the bulk of any restaurant business, not the celebs, though celebrities help to draw in everyone else. Daniel will take good care of you as a number of his clients we have interviewed can tell. He friendly and quite personable and he really knows his stuff and has a passion for the food and wines of Italy that’s almost impossible to duplicate. Frankly, Daniel is the best. He can tell you wonderfule stories about the wine you are drinking, its history, the owners and people who make the wine (his Friends) and his trips to all these Wine Estates all over Italy. And his knowledge and passion for the food is equal to his knowledge of Italian Wine. Often you’ll be drinking a bottle of Italian Wine that Daniel suggets and he’ll pull out his iPhone and show you pictures of the people who own the estate and make the wine. One example would be Daniel’s good friend Luigi Cappellino who owns Castel Verrazzano in Greve in Chianti (Tuscan) Italy. He’ll show you pictures of him and his cousins Anthony & Joe at Verrazzano when Daniel took them their, they stayed on the property and ate breakfast and dinner in the castel, with the great wines of Verrazzano.

After 5 years at DaSilvano, Daniel went on to become the Wine Director of Barbetta Restorante on West 46th Street in New York to head up the Greatest Italian Wine List in all of America. Daniel says, “the cellars are amazing.” Places like Babbo and Del Post get more press for having great Italian Wine List, which they do, but Daniel says, “The Wine List of Babbo & Del Posto are awesome, but in comparison to Barbetta, they are Childs-Play.” No exageration, merely fact Daniel says. And within that Wine List which is the Greatest Italian Wine List in all of America, is the Barolo / Barbaresco of which Daniel says is the greatest Barolo list in the World with it many Verticals of all the great Barolo Crus, like, Vietti Barolo Brunate and Lazarito, Cerretto Bricco Roche Bricco Roche, Marcarini Brunate, Michele Chiarlo Cerequio, Aldo Conterno Grand Bussia, Giacomo Conterno  Monfortino and Francia, Mauro Veglio Rocche dell’Annunziata, Contratto Cerequio, Elio Grasso Ginestra and more …

Daniel said he was quite fortunate in his job as Wine Director of Barbetta for 5 years as he was able to taste and drinks so many of these great Barolo Crus of various vintage, as well as all the multi vintage; Barbaresco, Amarone, Brunello, Super Tuscans, Champagne, and the top California Cabernets and Meritage Blends such as Opus One and Insignia.
Daniel had been writing for years, mostly essays, articles, and short stories. He wrote his first book La TAVOLA while he was at Barbetta in 2006 .. He said that 85% of the book was written in about 6 weeks time (quite fast), however he edited, polished it up and worked on it for another year before trying to get it published, which took five years. Actually La Tavola was published in June of 2012, followed by The FEAST of The 7 FISH which is the top selling cookbook of its genre. Daniel published Got Any Kahlua? The Collected Recipes of The Dude in the Summer of 2013, followed by SUNDAY SAUCE which has been a # 1 Best Seller Italian Cookbooks on Amazon for 5 months … Daniel published another # 1 Best Seller in June of 2014 with SEGRETO ITALIANO / Secret Italian Recipes & Favorite Dishes ..
Daniel says he’s currently working on a book on Chianti one of his great passions, as well as another Italian Cookook and an American Cookbook, both yet to be named ..

Greenwich Village Newport Steak, French & Italian Wine Dinner on Thompson Street in           “The Village.”  My buddy Chris B. and I had another nice little Wine-Dinner this past Sunday with his girlfriend Maria … It was quite the dinner … We had some really nice wine to drink, with cheese a Steak-House Salad, and the famed Newport Steaks of Greenwich Village … Chris gave me a call on Wedsday and said we where on for dinner this coming Sunday Night (Jan. 12, 2014) .. We were both quite phyched for a nice dinner and the prospect of drinking some great wines and The Newports, our favorite steaks. “A little Cote de Beaune” Chris uttered, immitating Miles in the greatest wine movie of all-time “Sideways” And so it was to be “a little Cote de Beuane” from Michele Bouzereau  2001 and  Sancere from Les Mont Damnes 2012, both wines quite lovely and very good examples of their prospective zones … Chris always picks out nice White Burgundy’s and the Bouzwereau was no exception, it was wonderful … Anyway, let me get back to the Newports and the order of things as concerned the dinner which was awesome as usual, and maybe a bit more awesome than usual …  So Friday I called Chris and asked hwo many we were gonna be for dinner as the butcher shop is closed Sunday and I was going to get the steaks on Saturday for Sunday .  We agreed on the 3 of us so I was set with the number of Newport Steaks I needed to pick up … Oh yes, and the butcher shop in question was none other than the butcher shop where the Newport Steak was invented by one Italian-Butcher named Jack Ubaldi way back in 1947 ..  Jack wanted to able to sell his cuts of Tri-Tip Sirloin more readily, so instead of selling

Tri-Tip in one piece which didn’t sell as well, Jack cut the Tri-Tip Sirloin into 3-4 individual Steaks from the one triangular cut of beef .. He named the Steak after the Nike-like logo on a box of Newport Cigarettes and the rest is history as they say .. Florence Prime Meat Market is still open on Jones Street in Greenwich Village and that’s where I get my Newports, either there or at Pino’s Prime Meats on Sullivan Street which cuts a Great Newport and makes tasty home-made Italian Sauages as well .. Pino’s is great, but I prefer and give an edge to Florence Market as they are the originator of the Newport and they look of the shop is much “Cooler” with all its original old fixtures …

So I go to Florence and ask them to cut me 3 nice Newport Steaks .. One of the butchers goes to the walk-in (Refrigerator) and comes out with a nice fresh looking Beef Tri-Tip .. He puts it down on the thick wooden butcher block and starts trimming the tri-tip of some of its fat .. He then cuts me off three nice 2 1/2″ thick Newports and wraps them in butchers paper .. The counter lady tells me it $18.99 for the Newports (about $6.50 a piece for 3 Prime Steaks). “A Bargain.” I pay the lady, get my steaks and walk the 3 blocks back to my apartment, where I put my Newports in the frig to the next day.

So I get to Chris’s house and as I’m climbing the stairs to his apartment I can hear some great Jazz playing . It was Dexter Gordon and quite fine . I was tired from walking up 5 flights of stairs, so I told Chris to crack open a bottle of wine, “I need to relax.” Chris cracked open the Cote de Beaune Bouzereau, and it was quite nice and everything you’d expect from a nice mid-road White Burgundy. We both loved it .. Chris broke out some nice Brie Cheese and we sipped the wine, ate cheese and relaxed listening to some nice tunes before I started on the dinner; prepping the salad, the mushrooms, potatoes, and onions for our dinner to come ..

Dam, another year has come and gone .. It’s hard to beleive another year has already gone by.
Seems just like yesterday the last Benvenuto Bruneelo Tasting at Gotham Hall in New York, happily tasting Montalcino’s latest release of the 2008 vintage Brunello’s along with Brunello Riserva 2007 and Rosso di Montalcino’s of 2011 .. Some really wonderful Brunello last year .. i can remember loving the offerings of; Donatella Cinelli Columbini 2008, Col d’Orcia 2008, Barbi Resierva 2007, and Uccelliera 2008, and Silvio Nardi 2008 ..  

I attended a great Siminar on Brunello conducted by the great Kevin Zraly where we tasted some wonderful current vintage Brunello including the just mention offerings as well as
Il Poggione Riserva 1999 and Col d’Orcia Brunello 2001, both great vintages and now aged quite well.
The seminar conducted by Mr. Zraly was phenominal as usual and when I inquired if Kevin was going to do it again, I was dissapointed to hear he wasn’t .. They got someone else whose name I do not recognize .. Hopefully the lady will conduct a fun, informative seminar, but after attending Zraly’s last year, I doubt if  very many could match Kevin’s wonderful performance. “Cie la Vie.”

At the tasting last year, one of my suppliers asked if he the Count Francesco Maroni Cinzano by, as he wanted to give me a personal 1-on-1 tasting of his latest offerings. Of course I said yes, “Do you think I’m a Mad-Man?” Maybe? Well the Count came by the next day with some phenominal Brunello’s, including; his 2008 Vintage, Rosso di Montalcino 2010, Col d’Orcia Brunello 2001, and the amazing Col d’Orcia Brunell “Col Vento Riserva” 2004 .. That wine is amazing and one of the best bottles of Brunello I tasted all year. And Poggio Al Vento 2004 was just being released in 2013, it was incrediable .. All the Counts wines are quite wonderful, and he also brought along a nice wine he makes at his property in Chile .. The wine “Erasmo” is a very fine Bordeaux Blend that I quite like, I put on my list, along with The Counts Brunello both 2005 and 2008 vintages which have been selling extremely well and our customers just love them …

“DON’T TOUCH IT !!! DON’T TOUCH IT !!! ” Cried Kevin Zraly, startling some, scarring others at last years Brunello Seminar he conducted at Benvento Brunello 2013 at Gotham Hall in New York …

Brunello di Montalcino is a visibly limpid, brilliant wine, with a bright garnet colour. It has an intense perfume, persistent, ample and ethereal. One can recognize scents of undergrowth, aromatic wood, berries, light vanilla and jam. 
To the taste the wine has an elegant harmonious body, vigorous and racy, it is dry with a lengthy aromatic persistence.
 
Because of its characteristics, Brunello can be aged for a long time, improving as the years go by. It is not easy to determine exactly for how many years it improves. It depends on the vintage. It varies from a minimum of 10 years to around 30 years, but it can be kept for even longer. Naturally it must be kept in the right way: in a cool cellar, but above all with a constant temperature, in the dark, without noises and smells; the bottles should be laid horizontally.
